How To Use Thyme
Thyme is used for adding layers of flavor without being overwhelming. It’s commonly used to season soups, sauces, and braises. It also makes a welcome addition in potatoes, rice dishes, vegetables and even fresh bread. And it pairs well with other Mediterranean herbs like oregano and marjoram, and is used throughout Italian, French, and of course, Mediterranean cooking.
Shallots (sm. round) have a milder flavor than scallions (green onion) and other types of onions like red onions, white onions, and yellow onions. This mild flavor makes shallots a good choice for vinaigrettes and other recipes that call for a light onion flavor.

Note, scallions/green onion, stronger near the roots, mild or near the tip. That's probably why the round green tips are cut Finley, and placed on top of dishes uncooked

Note: one report says shallots are about four times more expensive than a cooking onion, check that price.
Cilantro versus parsley (darker green)

Parsley, milder, tasting best for Mediterranean dishes, such as Italian and Greek.
1) mild bitter flavor
2) the leaves are chopped and used as a garnish or bundled to flavor soup stock.

Cilantro, harsher tasting, then parsley, best used in Mexican and Asian dishes.

** one YouTube said, don't buy curly leaf parsley for anything other than a garnish. It is tough and virtually flavorless.
