To make your own Buttermilk:

For one cup of buttermilk, put 1 cup of whole milk in mixing bowl and whisk in 1 Tbs of white or rice vinegar. Let stand for 5 minutes before use.

2 3/4 cups all purpose flour

1/3 cup sugar

1 tsp baking powder

1/2 tsp baking soda

3/4 tsp salt

2/3 cup raisins

1 tbs caraway seeds

I like to add 1/3 cup dried cranberries

wisk 2 lg eggs

1 cup buttermilk

Whisk the eggs and butter milk together then add to dry ingredients. Have 1/4 cup extra flour to add.

Put on parchment bake for one hour at 325° what check after 45 minutes.

Don't forget to do an egg wash

Our Artisan Bread

3 cups of flour:  2 of white and 1 of bread flour. 1/4 tsp. of yeast. 1/2 tsp salt.. 1 1/4 cup warm water.

Punch the dough down every couple hours. Usually after 24 hours, bring the door out and shape for baking cover and let's sit another hour or so before baking.

Bring oven to 450 and put a pan of water in the bottom. Bake for 30 min but check after 25 min.

I tried this recipe for the first time December 14, 2022 as part of a gift for RJ. It didn't work out so great so the next day Louisa oversaw what I did and found some flaws in my baking technique. Such as, I wasn't using grams as my measurement tool. Also, the yeast hadn't activated properly. Louisa helped me do a second loaf where the bread turned out so much better. We also noted some things we would like to change in this YouTube recipe.

1) Add a touch more cinnamon

2) add a little bit more sugar

3) not as much fruit as she put in. She put in a full cup. I would go about 90% of that.

4) add more salt

5) use only all purpose flour

And other things I learned making this particular fruit bread was my egg wash was all wrong. I had always cracked an egg in a bowl and put maybe a teaspoon of water in and mix the whole thing together this recipe taught me to separate the yolk from the whites of the egg, and maybe put in a teaspoon of half-and-half. The glaze was so much shinier.

Things to correct in this recipe, in my opinion. Only use all purpose flour

Double the amount of cinnamon.

Double the amount of sugar.

Add a pinch more salt.

Use a little less than the 1 cup of fruit. (90%)

​This fruit bread is probably best made in a bread pan, not in small batches like this. The excessive metal and heat dries the bread out a little too much. A larger loaf would probably mean a softer center.

 1 cup whole milk, warmed to about 110°F (240ml)

2 + 1/4 tsp yeast or 1 packet

3 tbsp granulated sugar divided

1 large egg

5 tbsp unsalted butter melted, plus more to brush on tops (71g)

1 teaspoon salt

3 1/4 cups all-purpose flour divided (390g)

Remember, if you start the dough too early and it looks like it's going to rise too high on its second rising, stick it in the refrigerator to slow it down or stop it

Baking pan approximately 9 x 13

(I used  glass pan approximately 9 x 13)

Cut dough into 16 pieces

​

3 hours rising total time. (2 hr then 1 hr)

​

Bake until golden brown, no time given.
