"Not So Classic"
French Omelette
Today I'm making a three egg French Omelette.
Although the "Classic French Omelette" usually has 1 or 2 herbs in it, I decided to add a little more filling.
Salt & pepper
Cheddar cheese (small amount)
Mushrooms (small amount)
Shredded Spinach (small amount)

Toppings might include:
Bell pepper
onion
muchroom
cheese
spinach
tomatoes
First soften the fillings in a separate pan.
Next, make the omelette using a knob of butter, about 1 tsb. and just before the eggs starts to firm up, add the filling then roll or fold up.

** Do not overcook the eggs!

Add coffee, toast with your favorite jam and you're all set.
Makes about 9 pancakes - Just right for 2 people
1 1/2 cups flour
3 1/2 teaspoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 1/4 cups milk
1 egg
3 tablespoon milted butter
1 teaspoon vanilla extract

In a large bowl, sift together the flour, baking powder, sugar, and salt.

Make a well in the center of the dry ingredients. Pour in the milk, egg, melted butter, and vanilla. Mix until combined.

Lightly oil a griddle or frying pan and heat to medium-high (about 375°F).
I made this March 5th 2023 and found it to be just as good as Louisas
Ingredients for 4 small or 2 large portions:
3 large room temperature eggs
2/3 cup room temperature milk
packed 1/2 cup flour (really pack the measuring cup firmly with flour)
1/4 tsp vanilla extract
1/4 tsp salt
3 tbsp clarified butter
- Bake at 425 F. 20-25 min
* garnish with melted butter, fresh lemon juice (Meyer if you can find it), and powdered sugar.
