Keynote:
Cut fennel, potato chips thin
2 reg. oranges
2 blood oranges
1 Fennel bulb (maybe try vegetable peeler for fennel) (use fennel leaves for garnish topping)
Juice from 1 Lemon
1/4 cup finely chopped Italian parsley
1 Tsp Maple syrup
1 Tsp Olive oil
1 Shallot (finely sliced)
Chives (if wanted)
Pistachio nuts
Heavy pinch Kosher salt
Heavy pinch Black pepper
For a decorative topping to soups or salads, use cheese shavings by using our vegetable peeler.

Ingredients: 10 items + chicken or tofu

I bought 1 package of Wegmans "Cilantro Lime Marinated Chicken" Good for 2 servings

3/ 4 avocados (1 per serving)

Romaine lettuce washed, and chopped <—— can I find already prepared?

1/2 c black beans (rinse, clean and dry)

1/2 cup Corn (buy Wegmans Fire Roaster Corn, as it's already cooked)

1/2 cup diced tomatoes use regular tomatoes and cut up.

Thinly sliced, orange bell peppers.
-
1/2 cup diced cucumber
-
1/2 cup, diced red onion (cut in slivers)
-
Heavy pinch of Mexican cheese
-
One small bag, Tortilla chips

Some of our favorite fillings for spring rolls:
Marinated fried tofu
Carrots
A leafy green
Bean sprouts
Red and green pepper
Avocado
Cucumbers
Peanut sauce recipe
2 tablespoons low, sodium soy sauce
2 tablespoons rice vinegar
2 teaspoons sesame seed oil
3 teaspoons sugar or honey
1 tablespoon. Sriracha sauce.
Three cloves crushed garlic
3 to 4 tablespoons of water
Mix then add
1/4 cup peanut butter

For the dressing
-
1 tablespoon finely minced garlic
-
½ teaspoon salt
-
1 lemon freshly squeezed juice
-
¼ cup Balsamic vinegar
-
¼ cup cider or white wine vinegar
-
1 tsp dry Italian seasoning
-
¾ cup first press extra virgin olive oil
-
Freshly ground pepper
Make about 1/2 of this dressing as it was a lot

For the Salad
-
1 fresh mozzarella cheese ball

12 Green olives
-
Assorted Tomatoes

6 Artichoke hearts

6 small Potatoes

1 medium carrot grated

2 cup spring mix

2 cup fresh basil or spinach leaves

1 package tofu (the way I make it in frying pan) OR use Chickpeas

NOTE: red onion would probably go well also if left in thin half circles

​One trimmed and sliced mango. But make sure it's ripe. Slightly soft with finger squeeze.
NOTE: Lou said don't buy the sun-dried tomatoes as she doesn't like them.
A nice cheese tray.
A nice easy cheese tray with deviled eggs a big hit for a small gathering. The deviled eggs were a big hit as well.
Lou loved this at Panera's and loved it when I made it at home.

Also here is the youtube for the Lemon Tahini dressing which I had at home.
So what I did was buy: Spring mix salad, 1 cucumber, 1 container of lemon hummus, 1 small Greek yogurt, 1 small container on grape tomatoes, 1 container of olives, one bag of "Quinoa and brown rice" (wegmans 17B) and 1 small Feta cheese.

Dressing wegmans organic Tahini 16 oz (3-B), 2 lemons (of juice), we have honey, salt, we had honey dijon mustered (16-B)

Making this one for the first time May 25, 2022. Seems pretty straightforward. Cup of basmati rice, buy some green onions, tomato, mango and papaya, black bean, red pepper, orange juice and cilantro. She added some other spices to include cumin seeds. The YouTube clip linked is for six different m this black bean meal is the fifth one in the series. Serve with a wedge or two of lime for squeezing the juice on the rice.
The meal was okay what needs to happen is only make it during the summertime when the mangos, papaya and avocado are ripe and in season
​Also the dish needs extra spices to kick it up a notch. I think it was too bland but has great potential
